Our shellfish are carefully selected to ensure consistent size and delicate taste.
The shellfish are taken from wild stock, found in their natural habitat, and include scallops (pecten maximus), abalone (haliotis laevigata), winkles (littorina littorea), wart venus clams (venus verrucosa), comb shells (glycimeris glycimeris), venus clams (spisula ovalis), cockles (cerastoderma edule) and welks (buccinum ondatum); otherwise, they are bred in sandy terrain and are exposed at low tide, e.g. carpet-shell clams (tapes decussatus).
Shellfish caught out a sea (scallops, wart venus clams, etc.) are gathered by small boats using short-range dragging methods, which are gentler on the shell, causing less stress and resulting in fewer breakages. Fishing areas where shellfish are gathered on foot (cockles, carpet-shell clams, etc.) are frequently checked. |

All our shellfish are stored in unsinkable finishing tanks, which are filled with water that is replenished twince a day, oxygenated 24 hours a day, and which undergoes regular microbiological analysis.
Sparkling heath and full traceability are always guaranted, and our facilities are HACCP approved. |
